Any thoughts on not picking Van Noy and Hoffman as captains?

Doesn't matter.

As if KVN isn't a team leader because he doesn't have a "C" on his jersey.

Hoffman isn't overly vocal, so not really surprised.

You don't have to be in charge to be a leader. You just have to influence others. I'm pretty sure both of those young men already do that.
